We all have our up and down days. There are some days we just don't want to exercise or eat healthy, I know. But! That is what today is all about! If you love and miss your Nutella, you are going to love today's recipe!

Enjoy this easy gluten-free, refined sugar-free, vegan and paleo recipe for a delicious chocolatey hazelnut spread!

How delicious does that look?! I know my mouth is watering for some already! I used to love eating Nutella and I would eat it by the spoon. I didn't even bother with toast (although it's completely delicious with toast!). But my Nutella-by-the-spoon days are quite over now. If I were to continue that particular habit, I'm 100% positive I would be struggling to pull on my jeans!

This recipe is a much healthier alternative to the usual, store bought version of the chocolate-hazelnut spread! There are no refined sugars or preservatives added and it's gluten free, vegan and paleo approved! Enjoy it with toast and sprinkle on some PGX for that fibre kick!

Homemade Nutella

Prep/Total time: 15 mins

Serves: 2 cups

All of the things you love about Nutella, but homemade, and healthier with roasted hazelnuts, cacao powder, creamy hazelnut milk, and a touch of maple syrup for the perfect sweetness. Gluten-free/vegan/paleo/refined sugar-free.

Ingredients

  • 2 c. unsalted, roasted hazelnuts, skins removed
  • 4 T. raw cacao powder, or cocoa powder
  • ¼ t. fine sea salt
  • 1 t. pure vanilla extract
  • ¼ c. pure Maple syrup
  • ½ c. hazelnut milk (you can also use unsweetened, vanilla almond milk or another nut milk if preferred)

Instructions

  • Place the hazelnuts in a large food processor and process on high until smooth, about 10 minutes. Scrape down the sides of the bowl as needed.
  • Add the rest of the ingredients and process on high until smooth and creamy, about 3-4 minutes.
  • Devour.

Step into spring with this refreshing salad!

Not a fan of tomatoes? We've found a delightful spring twist on the traditional caprese salad, sans tomatoes.

Fruit? Check. Leafy greens? Check. Toasted yummy almonds with the right amount of gourmet cheese? Double check! This delightfully light and fresh salad comes packed full of strawberries, bocconcini (one of my absolute favourite kinds of cheese), toasted almonds and lots of greenery. What's not to love?!

You can find the recipe below, adapted from The Bojon Gourmet. But of course, our version includes PGX!

*Note: This recipe serves two.

Balsamic Reduction Ingredients:

  • 2 tablespoons honey
  • 1/3 cup balsamic vinegar

Salad Ingredients:

  • 3-4 cups gently packed baby greens
  • 1 cup strawberries, halved or quartered 
  • 170-225 grams bocconcini (small mozzarella balls) in water, drained and halved 
  • large handful of basil leaves
  • 3-4 tablespoons toasted sliced almonds 
  • 1 tablespoon olive oil 
  • sea salt
  • freshly ground black pepper
  • 1 packet of PGX Daily Singles per serving

Balsamic Reduction Instructions:

  1. Mix honey and balsamic vinegar together into a small pan.
  2. Bring to a simmer over medium-low heat.
  3. Allow the mixture to simmer gently, stirring occasionally.
  4. When bubbling thickly, reduce by about a third for 5 minutes.
  5. Remove the mixture from heat and allow it to cool off completely.

Salads Instructions:

  1. Divide lettuce equally between two plates.
  2. Top leaves with strawberries, bocconcini, basil, and almonds.
  3. Drizzle 1 1/2 teaspoons olive oil, 1 1/2 teaspoons of the balsamic reduction over salad.
  4. Sprinkle PGX Daily Singles packet and a big pinch of salt over the top and add freshly ground black pepper.

Healthy meals don't have to be boring and tasteless. This delectable recipe for soft tacos will prove that you can maintain your waistline while adding some Mexican punch to your dinner table!

All too often I hear people say, "I'm on a diet. Just chicken and steamed broccoli for me!" or something along those lines. Don't get me wrong, those two things can be extremely tasty, but they can get incredibly boring! For sure a diet of chicken breast and steamed broccoli will help you to lose weight, if anyone can stick to just that! I find that the best way to lose weight and maintain a healthy lifestyle, happily, would be to have flavourful meals!

Like this recipe for Soft Tacos with Spicy Chicken from Health.com! It's full of delicious ingredients that pack a punch like fresh oregano, red onions, dark beer, cilantro and chipotle chiles!
