Little Black Bean Dip

As versatile as the little black dress, this bean dip can be used as a spread or a dip, or serve it on crackers as a vegetarian substitution for classic pâté.

Ingredients

14 oz can (400 mL) black beans

1 cup (250 mL) sunflower seeds

1 packet (1 g) stevia

1⁄4 cup (60 mL) red wine vinegar

1⁄2 tsp (2.5 mL) sea salt

1⁄4 cup (60 mL) apple cider

5–7.5 g PGX (depending on tolerance)

Directions

  1. Combine all ingredients into a food processor fitted with the s-blade.

  2. Process until smooth, stopping and mixing occasionally to ensure consistency.

  3. Serve on your favorite cracker with chopped vegetables.
